    Begin by preparing the chicken.

    Season the Chicken

    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the mixture all over the chicken, ensuring it is evenly coated.

    Marinate

    Drizzle the olive oil over the seasoned chicken and massage it into the skin. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator for more flavor.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Drain and place them in the smoker box or directly on the coals.

    Smoke the Chicken

    Preheat your smoker to 250°F (120°C). Place the chicken in the smoker, breast side up, and smoke for about 3 to 4 hours for a whole bird, or 1.5 to 2 hours for half a bird, or until the internal temperature reaches 165°F (74°C).

    Rest and Serve

    Once cooked, remove the chicken from the smoker and let it rest for 10-15 minutes before carving. Serve hot.
