Chips Preparation

    Prepare the Potatoes

    Wash and peel the potatoes. Using a mandoline or a sharp knife, slice the potatoes thinly (about 1/8 inch thick) and place them in a bowl of cold water to remove excess starch.

    Dry and Season

    After soaking for about 30 minutes, drain the potato slices and pat them dry with a clean towel. In a large bowl, combine the potato slices with salt, paprika, garlic powder, and black pepper. Toss until evenly coated.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.

    Repeat the frying process with the remaining potato slices. Once all chips are fried, serve immediately while hot and crispy.
