Prepare the Chicken
Rinse the whole chicken under cold water and pat it dry with paper towels. Remove any giblets from the cavity.

Season the Chicken
In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and dried thyme. Rub this mixture all over the chicken, making sure to get it under the skin and inside the cavity.

Prepare the Smoker
Soak wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C) and add the soaked wood chips to the smoker box.

Smoke the Chicken
Place the seasoned chicken on the smoker grate, breast side up. Close the lid and smoke the chicken for about 3-4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

Rest and Serve
Once the chicken is cooked, remove it from the smoker and let it rest for at least 15 minutes before carving. Serve hot and enjoy!
