Prepare the Catfish
In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Heat the Oil
In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Catfish
Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, coating well.

Carefully place the coated fillets into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
