    Prepare the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes to enhance flavor and moisture.

    In a bowl, combine cornmeal, flour, salt, black pepper, and cayenne pepper. Mix well.

    Bread the Catfish

    Remove catfish from buttermilk, allowing excess to drip off. Dredge in the cornmeal mixture until well coated.

    In a large skillet, heat vegetable oil over medium-high heat. Fry the catfish for 3-4 minutes on each side until golden brown. Drain on paper towels.

    In a bowl, mix cornmeal, flour, baking powder, sugar, salt, onion, milk, and egg until combined. Drop spoonfuls into hot oil and fry until golden brown. Drain on paper towels.
