Prepare the Turkey
Rinse the turkey breast under cold water and pat dry with paper towels. Place it in a large bowl.

Season the Turkey
In a small bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the turkey breast, making sure to coat it evenly.

Prepare the Smoker
Soak the applewood chips in water for at least 30 minutes. Preheat your smoker according to the manufacturer’s instructions.

Smoke the Turkey
Once the smoker is ready and the chips are soaked, place the turkey breast on the smoker rack. Add the applewood chips to the smoker box and close the lid. Smoke the turkey for about 2-3 hours, or until the internal temperature reaches 75°C (165°F).

Rest and Serve
Remove the turkey from the smoker and let it rest for 15-20 minutes before slicing. Serve warm.
