Prepare the Slaw
In a large bowl, combine the shredded cabbage and grated carrots.

In a separate bowl, whisk together the apple cider vinegar, sugar, salt, black pepper, and olive oil until the sugar is dissolved.

Pour the dressing over the cabbage and carrots, and toss to combine. Cover and refrigerate for at least 30 minutes to marinate.
