Method

Preparation of Wings

    Prepare the Chicken Wings

    Rinse the chicken wings under cold water and pat dry with paper towels. Place them in a large bowl and drizzle with olive oil. Season with salt, black pepper, garlic powder, and smoked paprika. Toss to coat the wings evenly.

    Smoke the Wings

    Preheat your smoker to 250°F (121°C). Arrange the wings on the smoker racks and smoke for about 1.5 hours, or until the wings reach an internal temperature of 165°F (74°C).

    Fry the Wings

    Once smoked, heat a deep fryer or large pot with oil to 375°F (190°C). Fry the smoked wings in batches for about 5-7 minutes until they are crispy and golden brown.

    Toss in Wing Sauce

    In a large bowl, toss the fried wings with the wing sauce until evenly coated. Set aside.

    Make the White BBQ Sauce

    In a mixing bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, black pepper, salt, and sugar. Whisk until smooth and well combined. Refrigerate until ready to serve.

    On a large serving platter, arrange the crispy smoked chicken wings, celery sticks, and a bowl of Alabama white BBQ sauce for dipping.
