Preparation & Cooking

    Prepare the Wings

    Preheat your smoker to 250°F (121°C). In a large bowl, toss the chicken wings with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.

    Smoke the Wings

    Place the seasoned wings on the smoker grates. Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

    Make the Wing Sauce

    In a saucepan, melt the butter over low heat. Stir in hot sauce, honey, garlic powder, and cayenne pepper. Mix until combined and warm through.

    Prepare Alabama White BBQ Sauce

    In a bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, horseradish, salt, and pepper until smooth.

    Fry the Wings

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the smoked wings for 5-7 minutes until golden brown and crispy.

    Toss in Wing Sauce

    Remove the fried wings from the oil and toss them in the prepared wing sauce until well coated.

    Serve the smoked chicken wings with celery sticks and Alabama white BBQ sauce for dipping.
