    Prepare the Wings

    Rinse the chicken wings and pat them dry with paper towels. Place them in a large bowl.

    Season the Wings

    In a small bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper. Pour the mixture over the wings and toss until they are evenly coated.

    Smoke the Wings

    Preheat your smoker to 250°F (121°C). Place the seasoned wings on the smoker rack and smoke for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

    Fry the Wings

    Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the smoked wings in batches until they are crispy and golden brown, about 5-7 minutes.

    Coat with Wing Sauce

    Transfer the fried wings to a large bowl and pour the wing sauce over them. Toss until the wings are well-coated.

    Arrange the wings on a platter with celery sticks and serve with Alabama-style white BBQ sauce for dipping.
