Preparation and Assembly

    Prepare the Chicken

    In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture all over the chicken, ensuring to cover it well for maximum flavor.

    Smoke the Chicken

    Preheat your smoker to 225°F (107°C). Place the seasoned chicken in the smoker and smoke for approximately 4-5 hours or until the internal temperature reaches 165°F (74°C).

    Pull the Chicken

    Once smoked, remove the chicken from the smoker and let it rest for 15 minutes. Then, using two forks, pull the meat from the bones, combining both white and dark meat.

    Prepare the Slaw

    In a separate bowl, combine shredded cabbage, carrots, vinegar, sugar, salt, and pepper. Mix well and let it marinate for at least 30 minutes.

    Make the Alabama White BBQ Sauce

    In a bowl, whisk together mayonnaise, vinegar, lemon juice, and pepper. Adjust seasoning to taste.

    Assemble the Sandwich

    On each toasted bun, add a generous portion of pulled smoked chicken, a drizzle of sweet and tangy BBQ sauce, a scoop of marinated slaw, a drizzle of Alabama white BBQ sauce, and top with pickles. Serve immediately.
