Prepare the Ribs
Preheat your oven to 300°F (150°C). In a bowl, mix the brown sugar, paprika, garlic powder, onion powder, salt, and black pepper to create a dry rub. Rub the spice mixture generously over the ribs.

Bake the Ribs
Place the ribs on a baking sheet lined with aluminum foil, bone side down. Cover the ribs with another piece of foil and bake for 2.5 to 3 hours until tender.

Make the BBQ Sauce
While the ribs are baking, prepare the BBQ sauce. In a saucepan, combine the apple cider vinegar, ketchup, honey, and a pinch of salt. Bring to a simmer over medium heat and cook for 15-20 minutes until slightly thickened.

Serve
Remove the ribs from the oven, let them rest for a few minutes, then slice into portions. Serve with pickles on the side.
