    Prepare the Pork Shoulder

    Rub the pork shoulder with yellow mustard, then mix together the brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Coat the pork shoulder evenly with the spice mixture.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the seasoned pork shoulder on the smoker and cook for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

    Make the Sop Sauce

    In a bowl, combine apple cider vinegar and honey to create the sop sauce. Use this to baste the pork every couple of hours while it smokes.

    Pull the Pork

    Once the pork is done, remove it from the smoker and let it rest for 30 minutes. Then, using two forks, shred the pork into bite-sized pieces.

    Serve

    Serve the pulled pork on a platter, drizzled with BBQ sauce and garnished with pickles.
