    Prepare the Pork

    Rub the pork shoulder with yellow mustard and then coat it with a mixture of brown sugar, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

    Smoke the Pork

    Place the seasoned pork shoulder in a smoker at 225°F (107°C) and smoke for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

    Make the Sop Sauce

    In a bowl, mix together apple cider vinegar, ketchup, Worcestershire sauce, and honey to create the sop sauce.

    Sop the Pork

    Every hour, baste the pork shoulder with the sop sauce to keep it moist and enhance flavor.

    Rest and Shred

    Once cooked, remove the pork from the smoker, cover it with foil, and let it rest for 30 minutes. Then, shred the pork using two forks.

    Assemble the Sandwiches

    Serve the pulled pork on toasted hamburger buns, topped with house-made BBQ sauce and pickles.
