Make the Pimento Cheese
In a large mixing bowl, combine the sharp cheddar cheese, cream cheese, mayonnaise, and diced pimentos. Mix until well combined and smooth.

Season the Mixture
Add the garlic powder, onion powder, cayenne pepper, salt, and black pepper to the cheese mixture. Stir until everything is evenly incorporated.

Chill
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.

Prepare the Chips
While the pimento cheese is chilling, slice potatoes thinly and soak them in cold water for 30 minutes. Drain and pat dry.

Fry the Chips
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potato slices in batches until golden brown and crispy. Remove and drain on paper towels, seasoning with salt while still hot.

Serve the chilled pimento cheese with the house-fried chips for dipping.
