    Wash and scrub the Russet potatoes thoroughly. Using a sharp knife or mandoline slicer, slice the potatoes into thin rounds, about 1/8 inch thick.

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This helps to make them crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a deep frying pan or dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pan. Fry for about 3-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
