Prepare the Meats
Smoke the brisket and pulled pork at 225°F for 8-10 hours until they reach an internal temperature of 195°F. For the chicken thighs, smoke them for about 3-4 hours until they are fully cooked.

Make the BBQ Sauce
In a bowl, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well and set aside.

Make the Alabama White BBQ Sauce
In another bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, and salt. Whisk until smooth and set aside.
