Preparation

    Prepare the Wings

    Preheat your smoker to 225°F (107°C). In a large bowl, toss the chicken wings with olive oil, salt, black pepper, smoked paprika, garlic powder, and onion powder until evenly coated.

    Smoke the Wings

    Place the wings on the smoker rack and smoke for about 1.5 hours, or until they reach an internal temperature of 165°F (74°C).

    Fry the Wings

    Once smoked, remove the wings and heat oil in a deep fryer to 375°F (190°C). Fry the wings in batches for about 5-7 minutes until crispy and golden brown.

Making the Sauces

    Make the Wing Sauce

    In a saucepan over medium heat, melt butter. Stir in hot sauce, honey, garlic powder, and apple cider vinegar. Simmer for 5 minutes, then remove from heat.

    Make the Alabama White BBQ Sauce

    In a bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, salt, black pepper, and sugar until smooth and well combined. Chill until ready to serve.

    Toss the fried wings in the wing sauce until fully coated. Serve with celery sticks and Alabama white BBQ sauce for dipping.
