    Prepare the Dough

    In a large bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until foamy. Add the flour, salt, and olive oil, and mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare the Toppings

    While the dough is rising, mix together the minced garlic, grated Parmesan, chopped rosemary, chopped thyme, and sea salt in a small bowl. Set aside.

    Shape the Focaccia

    Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out to about 1-inch thick and place it on a wood-fired baking sheet or pizza stone.

    Add Toppings

    Use your fingers to create dimples all over the surface of the dough. Drizzle with olive oil and sprinkle the garlic-Parmesan herb mixture evenly over the top.

    Bake

    Transfer the focaccia to the wood-fired oven and bake at around 450°F (230°C) for about 15-20 minutes or until golden brown.

    Serve

    Remove from the oven and let cool slightly. Serve warm with your choice of MJ Red Sauce or a drizzle of extra virgin olive oil and balsamic reduction.
