Make the Dough
In a large bowl, mix the flour and salt. Make a well in the center and crack the eggs into the well. Use a fork to gradually incorporate the flour into the eggs until a shaggy dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
Divide the dough into four pieces. Roll one piece at a time to about 1/8 inch thick using a pasta machine or rolling pin, keeping the remaining dough covered.

Cut the Pappardelle
Cut the rolled dough into 1-inch wide strips to create the pappardelle. Dust with flour to prevent sticking.
