Prepare the Salad
In a large bowl, combine the local artisan greens, sliced Granny Smith apple, shredded carrot, and prosciutto. Toss gently to mix.

Make the Dressing
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until emulsified.

Prepare the Apple Cider Glaze
In a small saucepan, combine apple cider and brown sugar. Bring to a boil and reduce until syrupy, about 10 minutes.

Assemble the Salad
Add the warm chopped bacon and potatoes to the salad mixture. Drizzle with Italian vinaigrette and toss to coat. Finish with a drizzle of apple cider glaze.
