Make the Parmesan Béchamel
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk, bringing to a simmer. Stir in the grated Parmesan cheese, salt, and pepper until smooth and thickened. Set aside.

Assemble the Sandwich
Preheat your oven to 375°F (190°C). On a slice of sourdough, layer the peppered ham, tomato slices, and fior di latte cheese. Top with another slice of sourdough to form a sandwich.

Cook the Sandwich
In a skillet, melt a little butter over medium heat. Grill the sandwich until golden brown on both sides, about 3-4 minutes per side. Place the sandwich on a baking sheet.

Add Béchamel and Bake
Pour the prepared béchamel sauce over the top of the sandwich and sprinkle with extra Parmesan. Bake in the preheated oven for 10-12 minutes until bubbly and golden.

Serve
Remove the sandwich from the oven, top each with a fried egg, and serve with dressed artisan lettuces on the side.
