Prepare the Cream Mixture
In a saucepan, combine the heavy cream and the seeds scraped from the vanilla bean. Heat over medium-low until it's hot but not boiling.

Whisk Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Combine Mixtures
Slowly pour the hot cream mixture into the egg yolk mixture while whisking constantly to prevent curdling.

Strain the Mixture
Strain the mixture through a fine-mesh sieve into another bowl to remove any solids.

Pour into Ramekins
Divide the mixture evenly among ramekins and place them in a baking dish.

Bake
Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake at 325°F (160°C) for about 30-40 minutes or until set.

Chill
Remove the ramekins from the water bath, let them cool, then chill in the refrigerator for at least 2 hours.

Caramelize the Sugar
Before serving, sprinkle a thin layer of granulated sugar on top of each custard and use a kitchen torch to caramelize the sugar until it forms a crispy top.
