    Cook the Udon Noodles

    Bring a pot of salted water to a boil. Add the udon noodles and cook for 8-10 minutes or until tender. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Shrimp and Vegetables

    While the noodles are cooking, prepare the shrimp and vegetables. Slice the bell pepper, julienne the carrot, and chop the green onions. Set aside.

    Cook the Shrimp

    In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

    Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink. Then, add the bell pepper, carrot, and snow peas, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

    Add the cooked udon noodles to the skillet. Pour in the soy sauce and oyster sauce, and toss everything together to combine. Cook for an additional 2 minutes to heat through.
