    Prepare Soybeans

    Soak the soybeans in water for 8 hours or overnight. Drain and rinse before cooking.

    Cook Soybeans

    In a large pot, cook the soaked soybeans in fresh water for about 1 hour until tender.

    Prepare Wheat

    Toast the wheat in a dry skillet over medium heat until lightly browned. Allow it to cool before proceeding.

    Combine Ingredients

    In a large mixing bowl, combine the cooked soybeans, toasted wheat, and koji mold. Mix well.

Fermentation Process

    Create Mixture

    Add 4 cups of water and salt to the soybean and wheat mixture. Stir until the salt is fully dissolved.

    Ferment the Mixture

    Transfer the mixture to a fermentation container. Sprinkle the lactic acid bacteria and yeast on top. Cover with a cloth and let it ferment in a warm, dark place for 6-12 months.

    After 6 months, taste the mixture. If it has a strong umami flavor, it is ready. If not, allow it to ferment longer.
