Cook the Noodles
Bring a pot of salted water to a boil. Add the Yaki Soba noodles and cook according to the package instructions (usually about 3-4 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

While the noodles are cooking, wash and prepare the vegetables. Shred the cabbage, julienne the carrot, slice the bell pepper, and chop the green onions. Set aside.

In a bowl, mix the shrimp with a tablespoon of soy sauce and let it marinate for about 10 minutes.

Heat a large wok or frying pan over medium-high heat. Add a splash of sesame oil. Once hot, add the marinated shrimp and stir-fry for about 3-4 minutes until they turn pink and are cooked through. Remove the shrimp from the pan and set aside.

Add the cooked noodles and shrimp back into the pan with the vegetables. Pour in the remaining soy sauce, oyster sauce, and sriracha (if using). Toss everything together for another 2-3 minutes, ensuring the noodles are well coated with the sauce.
