    Rinse the shrimp under cold water and pat dry with paper towels. Season with salt and pepper.

    Ensure the cooked rice is cold and separated. Chop green onions and prepare the peas and carrots mix if needed.

    Cook the Shrimp

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and cook until they turn pink and are opaque, about 2-3 minutes. Remove from skillet and set aside.

    In the same skillet, add a bit more oil if necessary. Crack in the eggs and scramble them until fully cooked. Remove and set aside with the shrimp.
