Prepare the chicken and vegetables
Slice the chicken breast into thin strips. Chop the broccoli into small florets, julienne the carrot, and slice the red bell pepper into thin strips. Chop the green onions, keeping the white and green parts separate.

Prepare the sauce
In a small bowl, combine soy sauce, oyster sauce, sesame oil, sugar, minced garlic, and grated ginger. Mix well until sugar is dissolved.

Cook the udon noodles
Bring a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions (usually about 5-7 minutes). Once cooked, drain and set aside.

Stir-fry the chicken
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken and stir-fry until golden brown and cooked through (about 5-7 minutes). Remove chicken and set aside.

Stir-fry the vegetables
In the same skillet, add a bit more oil if necessary. Add the white parts of the green onions, broccoli, carrot, and red bell pepper. Stir-fry for about 4-5 minutes until vegetables are tender but still crisp.

Add the cooked chicken back into the skillet with the vegetables. Pour the sauce over the chicken and vegetables, and stir to combine. Add the cooked udon noodles and toss everything together until well mixed and heated through (about 2-3 minutes).

Remove the skillet from heat and garnish with the green parts of the green onions. Serve immediately.
