Protein

Method

Preparation

  1. 1

    Marinate the Protein

In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken breasts and salmon fillets to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  2. 2

    Prepare the Vegetables

While the protein is marinating, prepare the asparagus by trimming the ends. Rinse the cherry tomatoes and slice them in half. Set aside.

Cooking

  1. 3

    Grill the Chicken and Salmon

Preheat your grill to medium-high heat. Once hot, remove the chicken and salmon from the marinade, allowing excess marinade to drip off. Place the chicken on the grill and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Place the salmon on the grill skin-side down, cooking for about 4-5 minutes per side, or until it flakes easily with a fork.

  2. 4

    Cook the Vegetables

In the last 5 minutes of cooking the protein, place the asparagus and halved cherry tomatoes on the grill. Grill them for about 3-4 minutes until they are tender and slightly charred.

Serving

  1. 5

    Plate the Dish

Once everything is cooked, remove from the grill and let rest for a couple of minutes. Slice the chicken and arrange it alongside the grilled salmon on a plate. Add the grilled asparagus and cherry tomatoes as a side. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
