In a large pot, bring the chicken or vegetable broth to a gentle simmer over medium heat.

Add Kimchi
Add the kimchi to the simmering broth and let it cook for about 5 minutes, allowing the flavors to meld.

Cook Ramen Noodles
Add the ramen noodles to the broth and cook according to package instructions, usually about 3-4 minutes.

Stir in the soy sauce and sesame oil. Taste and adjust seasoning with salt or more soy sauce if needed.

While the noodles are cooking, chop the green onions and prepare any additional toppings like soft-boiled eggs and nori.

Once the noodles are cooked, divide them into bowls. Ladle the hot kimchi broth over the noodles, and add the cubed tofu. Top with soft-boiled eggs, nori, green onions, and a drizzle of chili oil if desired.

In a bowl, combine the ground pork or chicken, finely chopped cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until fully combined.

Fill the Gyoza Wrappers
Place a gyoza wrapper on a clean surface. Add about 1 tablespoon of filling to the center of the wrapper. Moisten the edges with water, fold the wrapper in half to create a half-moon shape, and pinch to seal. Repeat with remaining wrappers and filling.

Cook the Gyoza
In a skillet, heat the vegetable oil over medium-high heat. Add the gyoza in a single layer and fry until the bottoms are golden brown (about 2-3 minutes).

Steam the Gyoza
Carefully add about 1/4 cup of water to the skillet and cover immediately. Allow the gyoza to steam for about 5-6 minutes or until the water has evaporated.

Remove the lid and let the gyoza cook for an additional minute to crisp up the bottoms. Serve hot with soy sauce or your favorite dipping sauce.
