Prepare the Broth
In a large pot, heat the vegetable broth over medium heat. Add the minced garlic and ginger, and bring to a simmer.

Cook the Noodles
Once the broth is simmering, add the ramen noodles and cook according to package instructions until al dente, usually about 3-4 minutes.

Combine Ingredients
Add the cooked ground pork to the broth along with the sesame paste, stirring well to combine. Add the chopped spinach and green onions, and simmer for another 2-3 minutes.

Ladle the ramen into bowls. Top with crushed peanuts and sesame seeds before serving.

Make the Filling
In a mixing bowl, combine ground pork, chopped cabbage, minced garlic, minced ginger, soy sauce, sesame oil, chopped green onion, salt, and pepper. Mix well until all ingredients are evenly combined.

Fill the Gyoza
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with water. Fold the wrapper in half and pinch to seal, making pleats as you go.

Cook the Gyoza
In a large skillet, heat a tablespoon of oil over medium-high heat. Place the gyoza in the skillet and cook for about 2-3 minutes until the bottoms are golden brown. Add a splash of water (about 1/4 cup) and cover immediately to steam for 4-5 minutes.

Once cooked, remove the gyoza from the skillet and serve with dipping sauce on the side.
