Chicken Katsu

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Coat the Chicken

    Dredge each chicken breast in all-purpose flour, shaking off excess. Dip into the beaten egg, then coat with panko breadcrumbs.

    Fry the Chicken

    Heat vegetable oil in a frying pan over medium heat. Once hot, add the chicken and fry until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Curry Sauce

    Prepare the Vegetables

    Dice the onion, carrot, and potato. Mince the garlic and ginger.

    Cook the Vegetables

    In a pot, heat a little oil over medium heat. Add the onion, garlic, and ginger, cooking until the onion is translucent.

    Add Carrots and Potatoes

    Stir in the carrots and potatoes. Cook for about 5 minutes, stirring occasionally.

    Add Curry Powder and Liquid

    Add curry powder and soy sauce, stirring for 1 minute. Then pour in the chicken broth and bring to a simmer.

    Thicken the Sauce

    In a small bowl, mix cornstarch with water to create a slurry. Stir into the curry sauce and cook until thickened, about 5 minutes.

Rice

    Cook the Rice

    Rinse jasmine rice under cold water. In a saucepan, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

Gyoza

    Prepare the Filling

    In a bowl, combine ground pork, chopped cabbage, green onions, minced garlic, ginger, and soy sauce. Mix well.

    Fill Gyoza Wrappers

    Place a spoonful of filling in the center of each gyoza wrapper. Wet the edges with water and fold over to seal, pinching tightly.

    Cook the Gyoza

    Heat vegetable oil in a non-stick skillet over medium heat. Place gyoza in the skillet and fry until bottoms are golden brown, about 2-3 minutes. Add water to the pan, cover, and steam for another 5 minutes.
