Preparing the Zucchini

Prep the Zucchini
Wash the zucchinis thoroughly. Cut off the ends and slice each zucchini into sticks about 1/4 inch wide and 3 inches long.

Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, garlic powder, paprika, salt, and black pepper until well combined.

Add Water
Gradually add water to the dry ingredients, whisking until you achieve a smooth batter. The batter should be thick enough to adhere to the zucchini sticks.
Frying the Zucchini Sticks

Heat the Oil
In a large pot or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature with a kitchen thermometer.

Batter the Zucchini Sticks
Dip each zucchini stick into the batter, allowing any excess to drip off.

Fry the Zucchini Sticks
Carefully place the battered zucchini sticks into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes, or until golden brown and crispy.

Remove the fried zucchini sticks from the oil and place them on a plate lined with paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
