Prepare the Vegetables
Peel and chop the carrots and potatoes into large chunks. Slice the onion into wedges and mince the garlic cloves.

Sear the Beef
In a large skillet, heat olive oil over medium-high heat. Season the chuck roast with salt and black pepper. Sear the roast on all sides until browned (about 3-4 minutes per side).

Combine Ingredients in Slow Cooker
Place the seared roast in the slow cooker. Add the prepared carrots, potatoes, onion, and minced garlic on top of the roast.

Add Liquids and Seasonings
Pour the beef broth and red wine over the roast and vegetables. Sprinkle thyme and tuck bay leaves around the roast.

Cook
Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and easily shreds with a fork.
Serving

Serve
Once cooked, remove the roast and vegetables from the slow cooker. Let the roast rest for 10 minutes before slicing. Serve hot with the vegetables on the side.
