    Prepare the Potatoes

    Peel and chop the Russet potatoes into even-sized chunks.

    Boil the Potatoes

    Place the chopped potatoes in a large pot, cover with water, and bring to a boil. Cook for about 15-20 minutes, or until fork-tender.

    Drain and Mash

    Drain the potatoes and return them to the pot. Add the butter, milk, salt, and black pepper. Mash until smooth and creamy.

Gravy

    Make the Roux

    In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2-3 minutes until golden brown.

    Add Broth

    Gradually add the beef or chicken broth to the roux, whisking constantly to avoid lumps. Bring the mixture to a simmer.

    Season the Gravy

    Add soy sauce, salt, and black pepper to the gravy. Continue to cook until thickened, about 5-7 minutes, stirring occasionally.
