Sauté the Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

Add Garlic
Stir in the minced garlic and sauté for an additional minute until fragrant.

Add Tomatoes and Broth
Pour in the canned crushed tomatoes and vegetable broth. Stir well to combine.

Season the Soup
Add the chopped fresh basil, dried oregano, salt, and black pepper. Stir to combine.

Simmer the Soup
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally.

Blend the Soup
After simmering, use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches.

Add Cream
Return the blended soup to the pot (if using a blender) and stir in the heavy cream. Heat through, but do not boil.
Serving

Serve the Soup
Ladle the soup into bowls and garnish with additional fresh basil, if desired. Serve warm.
