Method
Preparation of Shrimp

Prepare the Shrimp
Rinse the peeled and deveined shrimp under cold water. Pat them dry with paper towels. Butterfly the shrimp by slicing them along the back without cutting all the way through, then gently open them up.

Season the Shrimp
In a bowl, season the butterflied shrimp with salt and black pepper. Toss to coat evenly and set aside for 15 minutes.

Mix the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, paprika, and garlic powder. Whisk until well combined.

Prepare the Batter
In a separate bowl, beat the egg and then add the cold sparkling water to it. Mix well. Gradually pour the wet ingredients into the dry ingredients, whisking until smooth. The batter should be light and slightly thick.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Fry the Shrimp
Dip each seasoned shrimp into the batter, ensuring it is fully coated. Carefully place the battered shrimp into the hot oil in batches, avoiding overcrowding. Fry for 2-3 minutes on each side or until golden brown and crispy.

Drain the Shrimp
Using a slotted spoon, remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Repeat the frying process with the remaining shrimp.

Arrange the fried shrimp on a serving platter. Serve hot with lemon wedges and tartar sauce on the side for dipping.
