Clean the Mushrooms
Gently wipe the button mushrooms with a damp cloth to remove any dirt. Do not wash them under running water as this can make them soggy.

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well until combined.

Add Water to the Batter
Gradually add the cold water to the dry ingredients while whisking to create a smooth batter. Ensure there are no lumps in the batter.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip the Mushrooms
Carefully dip each mushroom into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

Fry the Mushrooms
Gently place the battered mushrooms into the hot oil, a few at a time to avoid overcrowding. Fry for about 3-4 minutes or until they are golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the mushrooms from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot.
