Wash and Cut Potatoes
Begin by thoroughly washing the Idaho potatoes under running water to remove any dirt. Pat them dry with a clean kitchen towel. Cut the potatoes into long, thin strips, about 1/4 inch thick to resemble traditional French fries.

Heat Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb any excess oil. While they are still hot, sprinkle with salt and black pepper to taste.

Repeat the frying process with the remaining batches of cut potatoes until all fries are cooked.
