Preparing the Fries

    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to form fries.

    Cooking the Fries

    Heat the vegetable oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C). Carefully add the cut fries in batches and fry until golden brown and crispy, about 5-7 minutes per batch. Remove fries and drain on paper towels. Sprinkle with salt while hot.

Making the Chili

    Cooking the Beef

    In a large skillet over medium heat, add the ground beef and cook until browned, about 5 minutes. Drain excess fat.

    Adding Vegetables

    Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

    Combining Ingredients

    Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, black pepper, and water. Bring to a simmer, then reduce heat to low and let cook for 20-30 minutes, stirring occasionally.

Assembling the Dish

    Layering the Fries

    On a large serving platter, layer the hot fries. Pour the chili mixture evenly over the fries.

    Adding Cheese

    Sprinkle the shredded cheddar cheese generously over the chili-topped fries.

    Garnishing (optional)

    If desired, top with sliced green onions before serving.
