Method

Preparation

  1. 1

    Prepare the meat

Start by tenderizing the cube steak if needed. Use a meat mallet to pound it to about 1/2 inch thickness. This will help in cooking evenly.

Breading

  1. 2

    Make the breading mixture

In a shallow dish, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure even distribution of the seasonings.

  2. 3

    Prepare the egg wash

In another bowl, whisk together the egg and milk until well combined.

Coating

  1. 4

    Coat the steak

Dredge each piece of tenderized cube steak in the flour mixture, then dip it in the egg wash, and finally return it to the flour mixture for a second coating. Ensure each piece is well coated.

Cooking

  1. 5

    Heat the oil

In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the flour mixture into it; if it sizzles, it's ready.

  2. 6

    Fry the steak

Carefully add the coated steak pieces to the hot oil, making sure not to overcrowd the skillet. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

  3. 7

    Drain and serve

Once cooked, transfer the chicken fried steak to a plate lined with paper towels to drain excess oil. Serve hot with your choice of gravy or sides.
