Steak Preparation

Prepare the Steak
Take the T-Bone steak out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This will ensure even cooking.

Prepare Garlic and Rosemary
Smash the garlic cloves lightly with the side of a knife and set aside. Rinse the rosemary sprigs and set them aside as well.

Check Temperature
Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (54-57°C).

Prepare Asparagus
Trim the tough ends of the asparagus and set aside.

Boil Baby Potatoes
Wash the baby potatoes and place them in a pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

Plate the Steak
Slice the T-Bone steak against the grain and plate it as desired. Serve with the sautéed asparagus and baby potatoes on the side.
