Burger Patties

Toppings

Chipotle Mayonnaise

Buns

Method

Prepare the Chipotle Mayonnaise

  1. 1

    Make the Chipotle Mayonnaise

In a small bowl, combine the mayonnaise, chipotle peppers, and lime juice. Mix until well blended. Adjust seasoning to taste and set aside.

Cook the Bacon

  1. 2

    Cook the Hickory-Smoked Bacon

In a skillet over medium heat, cook the hickory-smoked bacon until crispy, about 5-7 minutes. Transfer to paper towels to drain excess grease.

Prepare the Burger Patties

  1. 3

    Mix Ingredients for the Patties

In a large bowl, combine ground beef, salt, black pepper, garlic powder, and onion powder. Mix gently until just combined.

  2. 4

    Form Patties

Divide the beef mixture into 4 equal portions and shape each portion into a patty, about 3/4 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Cook the Burger Patties

  1. 5

    Grill the Patties

Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on each side for medium-rare, or until desired doneness. In the last minute of cooking, top each patty with blue cheese, allowing it to melt slightly.

Assemble the Burgers

  1. 6

    Build the Smoky Blues Burger

Toast the burger buns if desired. Place a patty on the bottom half of each bun. Top with crispy bacon, lettuce, tomato slices, and red onion. Spread a generous amount of chipotle mayonnaise on the top half of the bun. Place it on top of the assembled burger and serve.
