Cooking the Prime Rib

    Prepare and Season the Roast

    Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, salt, black pepper, and garlic powder. Make sure to coat it evenly.

    Roast the Prime Rib

    Place the seasoned prime rib on a roasting pan and roast it in the preheated oven for 20 minutes. Then, reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until it reaches your desired doneness (130°F for medium rare).

    Rest the Roast

    Once done, remove it from the oven, cover it loosely with foil, and let it rest for at least 20 minutes before slicing.

Sautéing the Vegetables

    Prepare the Vegetables

    While the prime rib is resting, slice the onion and mushrooms.

    Sauté the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced onions and sauté for about 5 minutes, or until they become translucent.

    Add the Mushrooms

    Add the sliced mushrooms to the skillet with the onions, and continue to sauté for an additional 5-7 minutes until the mushrooms are tender and cooked through. Season with a pinch of salt and pepper to taste.

Assembling the Melt

    Prepare the Bread

    Heat a griddle or skillet over medium heat. Butter one side of each slice of sourdough bread.

    Build the Sandwich

    On the unbuttered side of two slices, layer the sliced prime rib, sautéed onions, mushrooms, and top with Monterey Jack cheese. Place the other two slices of bread on top, buttered side up.

    Grill the Sandwich

    Place the sandwiches on the preheated griddle and cook for about 4-5 minutes on each side or until the bread is golden and crispy and the cheese is melted.

    Remove from the griddle, slice in half, and serve immediately while hot.
