Sandwich Preparation

    Grill the Portobello Mushrooms

    Preheat your grill or grill pan over medium-high heat. Clean the Portobello mushrooms and remove the stems. Brush each mushroom with olive oil and season with salt and pepper. Grill for about 5-7 minutes per side or until tender and grill marks appear.

    Prepare the Ciabatta

    While the mushrooms are grilling, slice the ciabatta bread in half. Toast the ciabatta halves on a grill or in a toaster until golden brown.

    Assemble the Sandwich

    Spread a generous layer of herb-infused brie cheese on the bottom half of each toasted ciabatta. Place the grilled Portobello mushroom on top, followed by the roasted red pepper slices and a handful of spring mix.

Red Pepper Aioli Preparation

    Make the Aioli

    In a small bowl, combine the mayonnaise, roasted red pepper, minced garlic, lemon juice, salt, and black pepper. Mix until well combined. Taste and adjust seasoning if necessary.

    Finish the Sandwich

    Spread the red pepper aioli on the top half of the toasted ciabatta. Close the sandwich and gently press down to secure the filling.
