Marinating the Pork

    Prepare the Marinade

    In a large bowl, combine pineapple juice, orange juice, minced garlic, oregano, cumin, chili powder, salt, and black pepper. Mix well.

    Marinate the Pork

    Place the pork shoulder in a large resealable bag or a bowl. Pour the marinade over the pork, ensuring it’s fully covered. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Remove the pork from the marinade and place it in a slow cooker. Add bay leaves. Cover and cook on low for 8 hours or on high for 4 hours until the pork is tender and easily pulled apart.

    Shred the Pork

    Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard any excess fat and bay leaves.

Assembling the Tacos

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until soft and pliable.

    To assemble each taco, place a portion of the shredded pork on a warm tortilla. Top with chopped onion and fresh cilantro. Serve with lime wedges and salsa on the side.
