    Prepping the Prime Rib

    Remove the prime rib from the refrigerator and let it sit at room temperature for about 1 hour before cooking. This helps the meat cook evenly.

    Seasoning the Meat

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, fresh rosemary, and fresh thyme. Rub the olive oil over the prime rib and then coat it evenly with the seasoning mix.

    Roasting the Prime Rib

    Preheat your oven to 450°F (230°C). Place the seasoned prime rib on a rack in a roasting pan. Roast for 20 minutes, then reduce the temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.

    Adding Broth

    During the last 30 minutes of cooking, pour the vegetable broth into the bottom of the roasting pan to enhance the flavor and keep the meat moist.

    Resting the Meat

    Once the prime rib reaches the desired temperature, remove it from the oven and cover it loosely with aluminum foil. Let it rest for at least 15-20 minutes before slicing. This allows the juices to redistribute.

    Slice the prime rib against the grain into thick slices and serve with your choice of sides, and pan juices drizzled over the top.
