Method

Preparing the Prime Rib

  1. 1

    Roasting the Prime Rib

Preheat your oven to 450°F (230°C). Season the prime rib generously with salt and black pepper. Place it on a roasting rack in a roasting pan and insert a meat thermometer into the thickest part of the meat.

  2. 2

    Cooking the Prime Rib

Roast the prime rib for about 20 minutes, then reduce the temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare, about 1.5 to 2 hours depending on the size. After cooking, remove from the oven and let it rest for 20 minutes before slicing.

  3. 3

    Slicing the Prime Rib

Once rested, slice the prime rib thinly against the grain for the best texture.

Making the Creamy Cucumber Dill Ranch Dressing

  1. 4

    Preparing the Cucumber

Peel and dice the cucumber into small pieces. If desired, remove the seeds for a smoother dressing.

  2. 5

    Mixing the Dressing

In a mixing bowl, combine the diced cucumber, plain yogurt, mayonnaise, dill weed, garlic powder, salt, and black pepper. Stir well until all ingredients are thoroughly mixed.

  3. 6

    Chilling the Dressing

Cover the dressing and refrigerate for at least 30 minutes to allow the flavors to meld.

Assembling the Gyro

  1. 7

    Preparing the Pita

Warm the pita bread in a dry skillet or microwave until pliable.

  2. 8

    Building the Gyro

On each pita, layer sliced prime rib, followed by lettuce, sliced tomato, sliced onion, and a generous sprinkle of feta cheese.

  3. 9

    Adding the Dressing

Drizzle the creamy cucumber dill ranch dressing over the toppings and fold the pita in half.
