Method
Preparation of Lobster Tails

Prepare the Lobster Tails
Start by thawing the lobster tails if they are frozen. Place them in the refrigerator overnight or in a bowl of cold water for a few hours until completely thawed.

Cut the Shell
Using kitchen shears, cut the top of the lobster shell lengthwise, stopping just before the tail fin. This will allow for easier access to the meat while steaming.
Steaming the Lobster Tails

Prepare the Steamer
In a large pot, add 4 cups of water and 1 tsp of salt. Bring the water to a boil over medium-high heat.

Steam the Lobster
Once the water is boiling, place the lobster tails in the steamer basket, flesh side up. Cover the pot with a lid and steam for about 8-10 minutes for one tail, or 12-15 minutes for two tails, until the meat is opaque and the shells are bright red.

Prepare the Drawn Butter
While the lobster is steaming, melt 4 tbsp of butter in a small saucepan over low heat. Keep warm until ready to serve.
