Main Ingredients

Method

Preparation

  1. 1

    Prepare the Potatoes

Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly under cold running water to remove any dirt. Pat them dry using a clean kitchen towel.

  2. 2

    Bake the Potatoes

Pierce each potato several times with a fork to allow steam to escape during baking. Rub each potato with olive oil and sprinkle with salt. Place them directly on the oven rack or on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

  3. 3

    Cook the Bacon

While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and place on paper towels to drain excess grease. Once cooled, crumble the bacon into small pieces.

  4. 4

    Prepare the Toppings

Chop the green onions, separating the green tops from the white bottoms. Set aside the green tops for garnish.

Assembly

  1. 5

    Assemble the Loaded Potatoes

Once the potatoes are baked, remove them from the oven and let them cool for a few minutes. Carefully slice each potato in half lengthwise and use a fork to fluff the insides.

  2. 6

    Add Toppings

Sprinkle the crumbled bacon evenly over the fluffed potato insides. Top with shredded cheddar cheese and a dollop of sour cream. Add a sprinkle of black pepper to taste.

  3. 7

    Garnish and Serve

Finish by adding the chopped green onion tops as a garnish. Serve the loaded potatoes warm and enjoy!
